Potato Salad

Ingredients
  • 9 cups cubed unpeeled red potatoes (about 3 lbs.)
  • 1/2 c. diced celery
  • 1/2 c. Relish This!
  • 3 hard-boiled eggs chopped
  • 1 c. mayonnaise (regular or fat-free)
  • 1/4 c. mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions
Place potato in a large pot, cover with water, and bring to boil. Cook about 8 minutes or until tender. Drain & mix with other ingredients. Cover and chill. Yield 8 servings. Serves4-6.
