Stuffed Jalapenos with Sweet Corn Relish

Prep Time: 20 minutes
Cook Time: 15 minutes
Yield: 12 jalapeno halves

Ingredients
6 medium jalapenos
4 ounces cream cheese, softened
2 tablespoons sour cream
1 garlic cloves, chopped
1/4 cup cilantro leaves, packed
1/8 teaspoon kosher salt
4 slices cooked bacon, chopped
1/4 cup shredded cheddar cheese
1/2 cup Sweet Corn Relish

Preparation
1. Preheat oven to 375F.
2. Remove stem of jalapenos and slice in half lengthwise. Use a spoon to scoop out seeds and inner membrane of each jalapeno. Set aside.
3. Using a food processor, process cream cheese, sour cream, garlic, cilantro and salt until smooth and creamy. Transfer cilantro cream to a small bowl and stir in cooked bacon.
4. Spread the filling evenly among each jalapeno. Top with shredded cheddar cheese and place on a baking sheet.
5. Bake for 15-18 minutes until cheese is melted and golden. Allow to cool for 5 minutes, then top each jalapeno with Sweet Corn Relish and serve.
