Golden Beet Fritter with Sweet & Tangy Relish

Inspired by crab cakes this version is made with golden beets and is savory and tangy.

  • 1 golden beet
  • 1 tablespoon lemon juice
  • 1/4 cup panko
  • 1/4 cup mayonnaise or greek yogurt
  • 2 tablespoons chives, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • canola oil

  • 1/4 cup greek yogurt
  • 1/4 cup Sweet & Tangy Relish from Relish This!
  • 1 tablespoon parsley, chopped
  • 1/4 teaspoon salt

  1. Cut off beet greens and peel beet. Using a food processor, grate beet to a medium thickness.
  2. In a bowl, combine grated beet, lemon juice, panko, mayonnaise, chives, salt and pepper. Form four balls among the mixture. Flatten and shape into a small circle about 1/4
