Broccoli Won Ton Cups
  • 1 tablespoon olive oil
  • 1/4 onion, diced
  • 2 cloves garlic, minced
  • 1 head broccoli, chopped
  • 2 cups mixed greens, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 24 wonton wrappers

  1. Preheat oven to 350 F
  2. Heat olive oil in pan. Add onion and garlic. Sautee on medium heat until onions become translucent.
  3. Add broccoli and cook on medium heat for 5-7 minutes.
  4. Add mixed greens, salt and pepper and cook until slightly wilted. Remove from heat.
  5. Line mini muffin tin with wonton wrappers. Cook for 8 minutes.
  6. Fill baked wonton wrappers with 1 tablespoon of vegetable filling.
