Corn & Black Bean Chicken Tortilla Cups
  • 6, 6 inch flour tortillas
  • 1 lb chicken breast, cooked & shredded
  • 10 oz Sweet & Spicy Corn & Black Bean Relish
  • 1/2 cup sour cream
  • cheddar cheese, shredded
  • lettuce, shredded
  • salsa

  1. Preheat oven to 350 F. Spray each tortilla with cooking spray and place in microwave for 20 seconds, just enough to soften tortilla. Press tortilla in a grease muffin tin. Bake for 10 minutes.
  2. Meanwhile, combine Corn & Black Bean Relish with shredded chicken in large skillet. Cook on medium-high heat for 4-5 minutes. Stir in sour cream.
  3. Fill each tortilla cup with 1/4 cup of chicken mixture.
  4. Garnish with cheese, lettuce and salsa.

Makes 6 tortilla cups
