Zucchini Relish Stuffed Chicken Breasts (serves 6) 6 Boneless, skinless chicken breasts 1.5 cups seasoned bread crumbs, plus more if needed 2 tsp garlic powder 6 oz cream cheese, cut into slabs and softened 6-10T Zucchini relish 3 T melted butter Lemon wedges and hot sauce, as desired Preheat oven to 350 degrees and coat a 9x13 inch pan with non-stick spray. Combine bread crumbs and garlic powder together in shallow bowl and set aside. With a sharp knife, butterfly the chicken breasts almost all the way through lengthwise, leaving about a 2 inch section together. Spread out the interior of the chicken breast and spread cream cheese on one side of each breast. Place 1-2T of zucchini relish (depending on size of breast)inside each pocket and spread liberally. Close breast and set aside. Repeat for remaining chicken. Dredge each stuffed chicken breast in bread crumbs and place in greased baking dish. Lightly drizzle melted butter over the top of each breast. Bake until thoroughly cooked, 30-40 minutes, or until the internal temperature of each breast has reached 165°. Serve with lemon wedges and hot sauce, as desired.
