Spicy Chicken Strips with Coconut-Lime Dipping Sauce

Yield: About 16 strips

1/4 cup flour
2 tablespoons chili powder, divided
1 teaspoon kosher salt
1/4 teaspoon black pepper
2 eggs
2 cups panko breadcrumbs
2 chicken breasts (about 1 lb)
Vegetable oil, for frying
1/2 cup Relish This! Pina Colada Topping
Zest of 2 limes

1. Get 3 medium-sized bowls. In the first bowl add flour, 1 tablespoon chili powder, salt and black pepper. In the second bowl, whisk together the eggs. In the third bowl add the breadcrumbs and remaining 1 tablespoon of chili powder.
2. Cut the chicken breast into strips about 1/2 inch wide. Coat each strip with the flour mixture, then dip into the egg and finally coat with breadcrumbs. Repeat procedure for each strip.
3. Heat about 1/2 cup vegetable oil in a frying pan over medium-high heat. Once pan is hot add chicken strips in batches. Fry on each side for about 2-3 minutes, until golden brown.
4. Meanwhile, mix together pina colada topping and lime zest. Garnish chicken strips with additional lime zest and serve.
